Analysis of waste sources and collection methods in the HoReCa sector in Wallonia
Mission objectives
To characterise and map the Walloon HoReCa sector, estimate its waste generation by stream, identify the drivers of food waste and quantify the financial savings from reducing it, in order to fill the gap in reliable data on this diverse and changing sector.
Achievements and impact
- Online survey conducted by ICEDD in 2016 among the Walloon HoReCa sector, gathering responses from 330 establishments.
- Complementary field audits carried out by Biowallonie on a representative sample, making it possible to analyse the actual composition of the waste generated and to quantify its various sources.
- Formulation of good practices for the collection, sorting, reduction and recovery of food waste, aimed at the sector.
- Production of a first mapping and quantified estimate of HoReCa waste generation in Wallonia, filling a previously identified knowledge gap on this sector.
